Macau Catering Services Company Limited (better known as MCS, or Servair Macau) was incorporated in Macau in 1995. MCS is a joint venture between Servair-SATS Holdings and local companies including, H. Nolasco, and Wu’s Group. Servair-SATS is made up of SERVAIR Group, a catering subsidiary of Air France, and SATS, a subsidiary of Singapore Airlines.
Both SERVAIR and SATS are specialists in the airline catering business with over 25 years of experience. Individually and jointly they operate numerous catering outfits around the world. SERVAIR is an industry leader. It is the third largest catering services provider in the world, after LSG and Gate Gourmet.
The Catering Building
The two-story catering building is the headquarters of MCS. Its entire operation is housed here. The total floor area of the building is approximately 4,400 square metres. On the ground floor, 80% of the floor area is dedicated to production and storage facilities. The administration, staff facilities, and logistical operations are located on the second floor.
The building, situated west of the passenger terminal in the maintenance area of the airport, was designed by Servair based on the Forward Flow principle. The entire building functions as a single production line. Raw materials arrive at the receiving dock at one end of the building and flow forward through the production process, emerging from the other end of the building as finished products.
MCS provides the airport with an average of 5,500 meals a day in Asian and western styles. The company’s catering services are both ISO9001:2000 and HACCP accredited.
Influenced by Servair Group, one of its major shareholders, MCS retains a strong French corporate culture.
